Chocolate-Covered Strawberry Cheesecakes
If you just can't make up your mind about what Valentine's Day dessert to make for a special someone this year, why not combine two for the best-of-both-worlds? These chocolate-covered strawberry cheesecakes combine two classic desserts—simple chocolate-covered strawberries and creamy cheesecake—into one bite-sized, mini treat.
For this recipe, we created our melted chocolate for our strawberries from a ganache made from melted semisweet chocolate, but you can use dark if that's more your thing. If you'd rather go classic and simple, use our chocolate-covered strawberries recipe as a guide to developing a simple melted chocolate for your strawberries.
Want to make these ahead of time? No problem! Once prepared, store in an airtight container (where they won't touch each other too much) in your fridge for 2-3 days.

Ingredients

graham crackers, crushed
- 4 tbsp.
melted butter
- 1/4 tsp.
kosher salt

blocks cream cheese, softened
- 2
large eggs
- 1/2 c.
sour cream
- 1/4 c.
sugar
- 1 tsp.
vanilla
Pinch of salt
- 1 c.
melted semisweet chocolate
- 12
strawberries
Directions
- Step 1Preheat oven to 325º and line a 12-cup muffin tin with paper liners. Spray liners with cooking spray. In a large bowl, combine crushed graham crackers, melted butter, and salt and stir until completely moistened.
- Step 2Press graham mixture into paper liners and set aside.
- Step 3In a large bowl, beat cream cheese until light and fluffy. Add eggs, sour cream, sugar, vanilla, and salt and beat until combined. Pour filling over graham crusts.
- Step 4Bake until center is slightly jiggly, 20 minutes. Let cool in muffin tin, then refrigerate at least 2 hours before topping with chocolate.
- Step 5Spoon melted chocolate over cheesecake tops, then dip strawberries in melted chocolate and rest on top.
- Step 6Let set until firm.
