Acai Power House Bowl

You can find maca powder, made from a root native to Peru, at health food stores and supermarkets with a robust natural foods section. Either red or yellow maca will work here, but the flavor of the red is more mild.

Ingredients

2 servings

1

banana, frozen

2

4-ounce packets pure, unsweetened acai purée

¾

cup nut, rice, or seed milk

2

Medjool dates, pitted

½

cup chopped frozen mango

½

cup frozen blueberries

½

cup torn kale leaves

¼

cup plain full-fat Greek yogurt

1

tablespoon fresh lime juice

2

teaspoons maca powder

Pinch of kosher salt

Toppings Suggestions

Crushed cereal

Golden berries

Toasted coconut flakes

Goji berries

Dried figs

Cocoa nibs

Preparation

  1. Step 1

    Place 2 small serving bowls in freezer to put a hard chill on them (this makes for a better acai bowl since it helps keep mixture tight and prevents melting). Cut off one-quarter of banana and set aside for serving.

    Step 2

    Using a hammer, rolling pin, or heavy skillet, crush acai packets. Pour milk into a blender. Add acai, dates, mango, blueberries, kale, yogurt, lime juice, maca powder, salt, and remaining frozen banana. Blend on low speed to combine, then gradually work your way up to high (you may need to use the tamping/stirring tool to get everything going). Blend until mixture is well combined and very thick but still spoon-able; don’t overblend or mixture will be too soupy and will begin to warm up from the friction of the blender.

    Step 3

    Divide acai mixture between chilled bowls and top with different toppings, including reserved banana. You can really use any toppings you want; that’s the best part!

  • Very good for a Saturday morning! I swapped the yogurt for cashew cream and topped with more fruit, hemp & chia seeds, coconut, cacao nibs, and granola. Kinda felt like it was missing something but maybe it was just the lime juice I forgot to put in.
